Happy Cow delivery person needed:
We need someone to pick up once every 2 weeks from Happy Cow.  We lost our regular pick up person and are depending on our substitute.  Please call Lori Pierce at the coop on Monday, or call her at home.

Happy Cow has local apples for order

They are grown in North Carolina so they are local, but not organic.  If you would like to order apples, please order with the regular Happy Cow order.  Available varieties are:  Gala, Granny Smith, Golden Delicious, Fuji, Honeycrisp.

Please bring in empty egg cartons for reuse.   There are boxes across from the counter to collect egg cartons.

Theresa Pizzuto is continuing to recover.  Her fractures are healing well, but it will be 4 to 8 weeks before they heal and she still needs physical therapy for her hand.  Theresa still has a lot of pain and fatigue.

Theresa always says how much she appreciates all words of encouragement and help she has gotten (and still needs).

Until Theresa recovers, please be patient if produce and other items aren’t restocked as usual.

The Co-op needs a cashier to help fill in for Theresa on Thursdays.  Other help is appreciated as well especially until Theresa gets back on her feet.

As you know, the cases of COVID-19 have been increasing in our area. We hope that you and your families are staying safe and healthy. We will continue to provide you with healthy foods and products to the best of our ability in order to help us all support our nutrition and immune systems. 

Health and safety are all of our responsibilities. We encourage you to practice safety measures at home and when you’re out. Take measures to avoid unnecessary contact with large crowds and confined gatherings of people to help slow the spread of COVID-19.

2020 Membership Renewals

Memberships are due the first time you shop at the Co-op in 2020. The cost has increased to $30 for the entire year, which is still a great deal. This is the first increase in 30 years, and is needed to increase our income. Thank you for your continued support!

Monthly Senior Discount Day
The Co-Op offers a 5% discount to senior 65+ on the 3rd Saturday of each month.  The next senior discount day will be held on Saturday, November 21.
Day Managers Needed

Secretary Needed
(Officer position – 0% markup)
 The Secretary takes minutes at the monthly manager meetings & quarterly general membership meetings, sends out the Weekly Update and all email communications to members & managers. Computer skills are required, including basic knowledge of Word and Excel; familiarity with Google Docs a plus. If you are interested or want to learn more please contact Theresa Pizzuto.

Assistant Manager Needed
(Officer position – 0% markup)

The Assistant Manager assists the General Manager and Associate Manager in management activities and decision-making, serves in the absence of the Assoc. Manager or General Manager as needed, attends Manager, General Membership and agenda-planning meetings and works to gain knowledge of all jobs, policies and procedures associated with the operation of the Co-op.  Good organizational, communication and computer skills are required, including basic knowledge of Word and Excel; familiarity with Google Docs, MailChimp and email lists is a plus. Paleo Chocolate Chip Coconut Flour Banana Bread

Prep Time:  10 minutes
Cook Time:   30 minutes
Total Time:   40 minutes
Yield:            12 servings
Calories:        138An easy to make, healthy banana bread made with coconut flour, no butter or refined sugar added! A fun and delicious way to use coconut flour!


  • 1 1/4 cups mashed banana (about 3 medium ripe bananas, mashed)
  • 1 teaspoon vanilla extract
  • 1/4 cup almond butter
  • 2 eggs, at room temperature
  • 1/2 cup coconut flour
  • 3/4 teaspoon baking soda*
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips, dairy free if desired plus extra for sprinkling on top


  1. Preheat oven to 350 degrees F. Line a 8×4 inch or 9×5 inch loaf pan with parchment paper and spray with nonstick cooking spray.
  2. In the bowl of an electric mixer or in a regular bowl, combine bananas, vanilla and almond butter; mix until well combined, smooth, and creamy.
  3. Add in eggs, one at a time and mix until combined. With the mixer on medium-low speed, add in coconut flour, baking soda, cinnamon and salt; mix again until just combined. Gently fold in chocolate chips.
  4. Pour batter into prepared pan and smooth top. Sprinkle a few extra chocolate chips on top. Bake for 25-35 minutes or until tester inserted into center comes out clean.
  5. Remove from oven and place on wire rack to cool for 20 minutes, then carefully invert, remove bread from pan and place back on wire rack to cool completely. Cut into 12 slices.

Recipe Notes*Please note that the video calls for baking powder as well, but the recipe is correct as-written. We’ve updated it to only use baking soda.

For best results, use bananas with lots of brown spots.

Feel free to use peanut butter or cashew butter instead of almond butter. If you use sunflower seed butter, please know that the bread likely will turn green after baking due to a chemical reaction. Don’t worry though, the bread will still be good!
