Local Produce this Week
We will receive greens and shiitakes this week. We received arugula, eggplants, endive and poblano peppers from Growing Greens on 10/3. We have have Co-op Garden okra, Italian sweet and jalapeno peppers available. We also have the following in stock: garlic, sweet potatoes (Covington, garnet, bonita (white flesh)), dried pink oyster, reishi and lion’s mane mushrooms
2023 Membership Renewals
Memberships are due the first time you shop at the Co-op in 2023. The cost is $30 for the entire year, which is still a great deal. Thank you for your continued support!

Local Meats:We have ground beef and breakfast sausage from Johnson Creek Farm. If you’re interested in bison or elk, or have requests for other types of local meat, please contact Cheri Noffke.

Pond House Farm: We have organic Aji lemon hot peppers and garlic in stock.

Rickety Barn Farm:We have traditional flavor pot pies in stock – made with all natural ingredients. Each pie feeds 4.

Monthly Senior Discount Day 
The Co-Op offers a 5% discount to seniors 65+ on the 3rd Saturday of each month.  The next senior discount day will be held on Saturday, October 21. 

Updated COVID-19 Reminders – Masks are now optional for shoppers – We are still following recommended safety protocols
The Pickens County community level is LOW. Based on the current CDC and SC DHEC guidelines, masks are optional for shoppers.

A large oval serving plate with chiles poblanos in a creamy white sauce. 
Rajas Con Crema
(Roasted Poblanos in a creamy sauce)

There’s nothing easier than these Rajas Con Crema. It’s the type of side dish you can make any night of the year, or even special occasions like holidays or get togethers. The cream sauce is silky and delicious plus it goes perfect with the roasted poblano peppers. So good!

Ingredients
large Roasted Poblano Peppers cut into strips
2 tablespoons butter
½ large white onion Sliced in strips
2 garlic cloves finely shopped
1 cup corn kernels fresh or frozen (thawed)
1 teaspoon chicken bullion powder or 1 cube
½ teaspoon black pepper
4 oz cream cheese (or use 8 oz for extra creaminess) (or reduced fat cream cheese for less calories)
1 cup Mexican crema, heavy whipping cream or sour cream (or plain fat-free Greek yogurt for less calories)
1 cup shredded melting cheese such a Oaxaca, Chihuahua, Mozarella, Monterrey jack, etc.

Instructions
In a medium saucepan or skillet, add the butter and onions over medium-high heat. Sautee until onion starts to soften. Add the garlic and roasted poblano strips. Cook for two minutes stirring often.

Add the corn, chicken bullion & black pepper and mix well.

Lower heat to medium, add the cream cheese and Mexican crema (or your substitute). Mix well.

Cook for about 5 minutes or until the cream starts to bubble. Finally, add the shredded cheese and cover the pot and turn off the heat. Let it sit covered until the cheese has melted. Serve hot or warm.

Notes To re-heat just turn the stove back on on low heat until heated through. Serve as a side dish, in tacos or add cooked shredded chicken when you add the poblano peppers. if you use rotisserie chicken it would make a great fast meal!
