New & Restocked Products
Local Pickled Okra: The Hampton Acres mild and hot pickled okra has been restocked.

Solgar Products: We now have children’s vitamin & mineral gummies and many of the Solgar supplements have been restocked.

Local Apples: We received golden delicious and stayman apples with the Happy Cow order on Monday, Oct 18.

Co-op Community Garden
We are beginning work on creating a community garden in the area behind the new building, open to all co-op members. If you’re interested in participating, please contact Cheri Lewis

2021 Membership Renewals
Memberships are due the first time you shop at the Co-op in 2021. The cost is $30 for the entire year, which is still a great deal. Thank you for your continued support!

Produce:  
RoundTop Farm will be delivering more fresh ginger and turmeric this week. 

Darkspore Mushrooms has been low on mushrooms the past couple of weeks. We hope to receive mushrooms this week.

Local Products: 
We have ordered more kimchi and kvass from Blue Ridge Brinery and also local ground beef and pork sausage. We will provide updates on expected delivery dates soon.

Monthly Senior Discount Day 
The Co-Op offers a 5% discount to seniors 65+ on the 3rd Saturday of each month.  The next senior discount day will be held on Saturday, November 20.

Updated COVID-19 Reminders – We are still following recommended safety protocols
We are still following all of the recommended CDC guidelines for keeping people safe during the COVID-19 pandemic, since the Delta variant is surging in our area. What we ask you to do the following:If you are feeling sick at all (fever or not), Please do not come into the store.If you know you have been exposed to COVID-19, DO NOT come into the store.  The CDC guidelines call for staying home for 14 days after you’ve been exposed to someone with confirmed COVID-19.  See this link for more information:  What to Do If You Are Sick | CDC

If you cannot or will not wear a mask, we will provide curbside pickup for you in order to keep our volunteer managers healthy.

Lion’s Mane Crab Cakes

Prep Time: 10 minutes
Cook Time: 4 minutes
Total Time: 14 minutes
Servings: 3 cakes

Equipment
▢ Saute Pan

Ingredients
▢ 8 oz Lion’s Mane mushroom
▢ 1 egg (or flax egg)
▢ 1/2 cup panko breadcrumbs
▢ 1/4 cup onion (finely diced)
▢ 1 tbsp mayonnaise or vegan mayonnaise
▢ 1 tsp Worcestershire sauce
▢ 3/4 tsp old bay seasoning
▢ 1 tsp dijon mustard
▢ 1 tbsp parsley (finely chopped)
▢ 1/4 tsp salt (to your taste)
▢ 1/4 tsp black pepper
▢2-3 tbsp oil (to fry cakes)
▢2 optimal garnish: lemon wedges

Quick Tartar Sauce
▢ 1/4 cup mayonnaise or vegan mayonnaise
▢ 1 tbsp dill pickle relish
▢ 1/4 tsp old bay seasoning

Instructions
Hand shred Lion’s Mane Mushroom into small pieces resembling texture of flakey crab.

In large bowl, combine egg, mayonnaise, onion, Worcestershire sauce, old bay seasoning, Dijon mustard, parsley (finely chopped), salt and pepper. Mix until fully incorporated.

Mix in Lion’s Mane Mushroom until fully incorporated.

Mix in Panko breadcrumbs until fully incorporated.

Form mixture into 3-4 equal size round flat patties (about 1/2 to 3/4 inch thick).

Heat oil in sauté pan on medium/high heat. Cook patties for approximately 2-3 minutes per side. Should be golden brown and cooked throughout.

Add optional garnish, squeeze of lemon and enjoy!

Notes
Leftovers and Storage: Transfer to airtight container or dish. Refrigerate for up to 48 hours. Can reheat and serve.

Vegan/Vegetarian Substitutions or Omission: You can use vegan mayonnaise and flax egg in place of regular mayonnaise and egg in this recipe.
