New this week We received kimchee, kvass, & sauerkraut from Blue Ridge Brinery last week as well as shiitake mushrooms and organic sweet potatoes, kale, and Romaine lettuce, and we were able to harvest collards from the co-op garden.When the weather at the co-op cooperates, we are still harvesting arugula, collards, kale, and kaleidoscope lettuce from our garden. We also still have co-op turmeric available. Co-op Garden dried basil (Thai and Sweet) is still available in the herbs section as well. |

Recipes and Health Articles Low Carb Cuban Style Black Beans An easy low carb take on classic style Cuban black beans. This makes the best side with cauliflower rice and Mojo chicken or pork! ![]() Cook Time: 10 minutes Total Time: 20 minutes Servings: 8 Calories: 196kcal Author: Bon Appeteach Ingredients2 – 15 oz. cans Black Soy Beans I used the Eden Organic brand *DO NOT drain or rinse*1 tsp. Oil olive or avocado1/2 Green Pepper diced small1/2 Red Onion diced small1 Small Jalapeno seeds removed, diced small2-3 Garlic Cloves minced1 tsp Cumin1 tsp Oregano2 Bay LeavesSalt & Pepper to taste1 tsp White VinegarInstructions1. Add the oil to the saucepan and heat over medium heat. Add the diced veggies and sauté for about 5 minutes. Be careful not to let the garlic burn. 2. Add in the two cans of black soy beans (do not drain or rinse). Mix in the seasonings and then add the bay leaves. 3. Allow the mixture to simmer over low heat for as long as possible to develop the flavors (I like a solid 30-45 minutes if possible). 4. Before serving, remove the bay leaves and stir in the vinegar.
