Monthly Senior Discount Day The Co-Op offers a 5% discount to seniors 65+ on the 3rd Saturday of each month. The next senior discount day will be held on Saturday, January 21. Updated COVID-19 Reminders – Masks are now optional for shoppers – We are still following recommended safety protocolsThe Pickens County community level has increased to HIGH. Based on the current CDC and SC DHEC guidelines, masks are optional for shoppers. Day managers will decide whethervolunteer workers will wear masks on their shifts. We are still following all of the recommended CDC guidelines and SC DHEC guidelines for keeping people safe during the COVID-19 pandemic, so we will reinstate the mask policy if the transmission rate increases again. We ask you to do the following:If you are feeling sick at all (fever or not), Please do not come into the store.If you know you have been exposed to COVID-19, DO NOT come into the store. The CDC guidelines call for staying home for at least 5 days after you’ve been exposed to someone with confirmed COVID-19. Recipes and Health Articles Lion’s Mane Mushroom “Lobster” Roll by Erica (Veggie Veggie Vici) Serves: 2 Prep Time: 10 minutes Cooking Time: 10 minutes Total Time: 20 minutes Lion’s Mane (aka Pom-Pom) mushrooms have a mild, sweet and savory flavor with texture similar to tender meat or shellfish. They can be hard to find, I picked these up from my local Farmer’s Market, but you substitute Shiitake or Chanterelle mushrooms. Ingredients 1 tbsp olive oil juice 1/2 lemon (about 1 tbsp) 1/2 lb Lion’s Mane mushrooms, cut into 1/4 inch slices 1/4 cup vegan mayonnaise 1/4 red onion, diced 1/4 cup fresh chives, diced (can sub fresh dill, green onions, or a mixture!) 1 stalk celery, finely diced 1 tbsp garlic powder 2 rolls, hoagie or french (or you can serve over salad) salt, pepper and paprika to taste optional: 2 tsp seaweed granules, or nori sheets (cut into small pieces) optional: vegan butter Instructions Prepare mushrooms. To a large pan: heat 1 tbsp olive oil over medium-high heat. Cook mushroom slices, searing each side for about 2 minutes. Remove mushrooms and drain on paper towels. Once cooled, shred the mushrooms with a couple of forks or your fingers. Prepare the dressing. To a medium sized bowl: whisk the vegan mayonnaise, garlic powder and lemon juice. Add chopped celery, red onion, chives (or dill), and optional seaweed. Whisk until well combined. Taste dressing and season with salt, pepper and paprika to your liking. Add in shredded mushrooms, stir until well incorporated. Toast your buns. Heat a grill pan or skillet over medium heat. Brush the outside of the rolls with olive oil. Toast the buns until slightly golden, about 1 minute per side. Open the bun and toast the inside, about 1 minute. (Alternatively, you can also broil the rolls on low for about 2-3 minutes. Watch closely so they don’t burn!) Assemble. Remove from heat. Brush the optional vegan butter on the inside of the bun, apply half of the “Lobster” Roll mixture per bun. Buon appetito!
