Assistant Manager Needed (Officer position – 0% markup): The Assistant Manager assists the General Manager and Associate Manager in management activities and decision-making, serves in the absence of the Assoc. Manager or General Manager as needed, attends Manager, General Membership and agenda-planning meetings and works to gain knowledge of all jobs, policies and procedures associated with the operation of the Co-op.  Good organizational, communication and computer skills are required, including basic knowledge of Word and Excel; familiarity with Google Docs, MailChimp and email lists is a plus. Board of Directors Open Positions: Interested in helping the Co-op grow, solve problems, brainstorm, and be pro-active? We currently are looking for members who would be interested in filling open positions on the Board of Directors; term would begin January 2019. Organic Pistachio and Black Sesame Brittle

• 11⁄3 cups (6 ounces) pistachios, roasted, unsalted
• 11⁄4 cups (6 ounces) Simply Organic® Black Sesame Seeds
• 2 cups cane sugar
• 1⁄2 cup water
• 1⁄3 cup organic corn syrup or brown rice syrup
• 1⁄2 cup (1 stick) unsalted butter
• 1 teaspoon sea salt
• 1 teaspoon Simply Organic® Pure Vanilla Extract
• 1 teaspoon baking soda
• Flaky finishing salt, such as kosher flake or black lava salt

Directions

1. Line a large baking sheet with foil or a silicone baking mat, and spray or brush lightly with oil.
2. Chop pistachios into approximately ¼-inch pieces and set aside. On a separate, dry sheet pan, spread sesame seeds evenly and toast in a 350-degree oven for 8 to 10 minutes, or until they smell pleasantly nutty. Set both aside.
3. In a deep saucepan over medium heat, combine sugar, water, corn syrup, butter and sea salt. Bring mixture to 260 degrees*, stirring frequently (this may take about 10 minutes). Mix in pistachios and sesame seeds. Increase heat to medium-high and bring to 300 degrees without stirring (may take 10 to 15 minutes).
4. Remove from heat and carefully stir in vanilla, then baking soda. Immediately pour brittle onto prepared baking sheet. Using the back of a large, lightly oiled spatula, spread brittle into an even layer — the thinner the better. (If having trouble, spread with lightly oiled or gloved hands, once cool enough to handle.) Sprinkle with finishing salt.
5. Let cool completely, about 20 minutes. Break brittle into large pieces and store in an airtight container for up to 1 month.

• *Use a candy thermometer to monitor temperature. Attach thermometer to side of pan and position it so it does not touch bottom of pan.
