Announcements:
Co-op Re-Location Update-
We want to thank everyone who joined our February 27 Manager’s Meeting on zoom despite the short notice.  We felt it important to discuss the lease on our current building and our tentative relocation plans.

As you may already know, the landlord has plans to sell the co-op property and is raising our rent. Update on co-op relocation discussion: We decided in today’s meeting to proceed with signing the lease for a 3-month term at our current location in order to provide us with more time to explore our options for an alternate location. We will renew it as needed until we have identified a location that will best serve our needs. If you were unable to attend today’s manager meeting where we discussed this and want more information, please email me with questions, ideas, etc. Thanks!

In the meantime, we will continue with business as usual, and appreciate your continuing support of our member-owned, all-volunteer cooperatively-run business providing healthy foods and products to our local community.

Seed Savers Exchange Order

Lillian learned that Seed Savers Exchange did not receive the seed order she submitted in January.  Lillian resubmitted the order and has been told the order should arrive in 2 weeks.  We apologize for the delay.

2021 Membership Renewals

Memberships are due the first time you shop at the Co-op in 2021. The cost is $30 for the entire year, which is still a great deal. Thank you for your continued support!

Monthly Senior Discount Day
The Co-Op offers a 5% discount to seniors 65+ on the 3rd Saturday of each month.  The next senior discount day will be held on Saturday, March 20.

Updated COVID-19 Reminders – We are still following safety protocols
As you know we are still following all of the recommended CDC guidelines for keeping people safe during the COVID-19 pandemic.  View the full list of co-op practices and reminders here.
What we ask you to do:
  • If you are feeling sick at all (fever or not), Please do not come into the store.
  • If you know you have been exposed to COVID-19, DO NOT come into the store.  The CDC guidelines call for staying home for 14 days after you’ve been exposed to someone with confirmed COVID-19.  See this link for more information:  What to Do If You Are Sick | CDC
  • If you cannot or will not wear a mask, we will provide curbside pickup for you in order to keep our managers healthy.

Meeting Information

Manager Meetings (4th Saturdays):  Our next manager meeting will be held VIRTUALLY on Zoom on Saturday, March 24 at 9:30 a.m.

Membership Meeting (2-3 per year):  The first quarter virtual membership meeting will also be held on the same day.
Please mark your calendars for both meetings.  We will continue to hold our meetings virtually until it is safe to gather again, which may be a while.

Green Lentil Spaghetti Bolognese

This tasty vegetarian and vegan green lentil bolognese is the perfect weeknight dinner, packed with veggies and green lentils in a rich tomato sauce. This bolognese sauce is kid friendly and sure to win over anyone who tries it.

INGREDIENTS

  • 1 small carrot, chopped into small pieces
  • 1/2 medium red onion, minced 1 red bell pepper, chopped into small pieces
  • 250g (8.9oz) portobello mushrooms, sliced
  • 5-6 cloves of garlic, minced
  • 1 Tbsp mixed Italian dried herbs
  • 60mls (1/4 cup) of red wine – or a splash of balsamic vinegar
  • 2-3 tsp of vegan Worcestershire sauce, or 1 Tbsp of something like mushroom ketchup / brown sauce
  • 400g (14oz) can of cooked green lentils, drained and rinsed – if you’re not using canned, it’s about 1 and 1/2 cups of cooked lentils
  • 4 Tbsp of tomato paste 2 Tbsp of sundried tomato paste
  • 400g (14oz) can of whole plum tomatoes
  • 400g (14oz) can of cherry tomatoes
  • 500g (18oz) package of dried spaghetti
INSTRUCTIONS
  1.  In a large skillet or pan, heat some olive oil and saute your carrots, onion and peppers until soft.
  2.  Add the mushrooms and continue to saute all of the vegetables until they are starting to brown, and the liquid from the mushrooms has mostly cooked off.
  3.  Add the garlic and herbs and and cook for another minute until fragrant.
  4.  Add the tomato paste and Worcestershire sauce. Mix into the vegetables, then pour in the wine and let the mixture bubble and reduce for a few minutes.
  5.  Add the lentils and stir through.
  6.  Add both cans of tomatoes. Bring to bubbling, and then simmer for about 30 minutes more.
  7.  Cook your spaghetti according to package instruction.
  8.  Serve. Spoon spaghetti into each bowl and top with a few ladles full of bolognese sauce.

If you’re not using the wine, add a splash of balsamic vinegar and a bit of water if the mixture is too sticky in Step 4.
