Recipes and Health Articles Spring onion Curry Did you know that not only were spring onions worshipped by ancient Egyptians as a symbol of the universe, but were also grown in Chinese gardens 5000 years ago? These green veggies are also a great source of Vitamin A, C, and K. So, a Spring Onion Curry is not just tasty; it has amazing health benefits too. What fun! Recipe by: JEYASHRI SURESH Total Time:: 15 minutes Serves: 4 Nutrition facts:: 240 calories, 9 grams fat Ingredients 2 bunches – Spring onion 3 tbsp – Besan/ Kadalai Maavu (chickpea flour) 1/4 tsp – Red chilli Powder 2 tsp – OilSalt to taste 1/4 tsp- Garam Masala 1/4 tsp- Cumin seeds 1/4 tsp – Mustard seeds Curry leaves – 2- 3 sprigs (you can substitute lime or lemon zest, bay or lemon balm leaves, or basil) How to Make Spring onion Curry Wash and chop the spring onions finely (both the green and white part together). Heat oil in a kadai and splutter the mustard seeds, cumin seeds and curry leaves. Then add the chopped spring onion and saute. Add the salt and mix well. Allow this to cook for 1- 2 mins. Now add the besan, red chilli powder and garam masala and mix well. Saute until the besan gets cooked. Serve hot.
