UPDATE FOR THE WEEK OF APRIL 05

Announcements Relocation UpdateWe are continuing to follow up on the current property relocation options (both lease and purchase) in the area and have created work teams to begin planning the move. We will share updates as soon as we have more information. In the meantime the Co-op is operating as usual. If you would like to volunteer to assist please contact Theresa Pizzuto or Pete Santora.
 Local Bread Vendor
We received our first delivery from Backwoods Bakery on Saturday, April 3.  They delivered organic wheat breads, bagels, scones,  brownies and cookies.  They are a  small-batch artisan bakery deep in the backwoods of NC: https://www.facebook.com/bakersinthebackwoods/. Their flour is sourced from NC mills and all are from certified organic grain.

We’ll be receiving a selection of breads from them monthly: cinnamon swirl, rustic sourdough, almost whole wheat, cranberry walnut, & soft pain de mie French loaf . If you would like to place an order for future deliveries, they will need to be placed by the Saturday before delivery with Carroll Brown, who will pickup the orders. We will share upcoming delivery order deadlines and dates in future weekly updates.
Meeting Information – Mark your calendars!Manager Meetings (4th Saturdays): Our next manager meeting will be held VIRTUALLY on Zoom on Saturday, April 24 at 9:30 a.m.  All are welcome.We will continue to hold our meetings virtually until it is safe to gather again, which may be a while.  2021 Membership Renewals

Monthly Senior Discount Day The Co-Op offers a 5% discount to seniors 65+ on the 3rd Saturday of each month.  The next senior discount day will be held on Saturday, April 17.

Updated COVID-19 Reminders – We are still following safety protocolsAs you know we are still following all of the recommended CDC guidelines for keeping people safe during the COVID-19 pandemic.  View the full list of co-op practices and reminders here.
 What we ask you to do:If you are feeling sick at all (fever or not), Please do not come into the store.If you know you have been exposed to COVID-19, DO NOT come into the store.  The CDC guidelines call for staying home for 14 days after you’ve been exposed to someone with confirmed COVID-19.  See this link for more information:  What to Do If You Are Sick | CDCIf you cannot or will not wear a mask, we will provide curbside pickup for you in order to keep our managers healthy.

Grain Free Asparagus and Goat Cheese Quiche
 This Grain Free Asparagus & Goat Cheese Quiche has such a buttery and delicious gluten free crust and is loaded with perfect spring veggies!

INGREDIENTS:1 + 1/2 cups whole cashews1/4 cup coconut flour2 egg whites1/4 cup melted ghee (or grass-fed butter)1 and 1/2 tsp. salt, divided6 eggs, beaten1 Tbsp. almond milk1/4 tsp. pepper4 oz. goat cheese, divided3/4 cup chopped asparagus (about 1/2 of a bunch) 
INSTRUCTIONSPreheat the oven to 350F.To make the crust, in a food processor, combine the cashews, coconut flour, egg whites, ghee and 1 teaspoon of the salt. Process until the cashews break down and the mixture forms into a ball.Remove the crust and press it evenly into the bottom of a 9-inch tart pan and press the dough up the sides of the pan. Set aside while you make the filling.Whisk together the eggs, almond milk, pepper and the remaining salt. Crumble the goat cheese.Once well whisked, stir in 3 oz of the crumbled goat cheese (about 3/4 of the cheese) and the asparagus.Pour the filling into the tart pan and bake in the preheated oven for 30-35 minutes, or until the middle is set.Sprinkle the remaining goat cheese on top of the quiche and serve. YIELD: 6-8 Servings
