UPDATE FOR THE WEEK OF July 1

Announcements: Holiday Closure Monday, July 5We will be observing the Independence Day holiday on Monday. We wish you and your families a safe and healthy weekend!! We’ll be open as usual on Tuesday, July 6, with the Happy Cow milk delivery  that day.

Carlson Sale Order DeadlineCarlson is setting in place a line drive for the Co-op, with 20% off each item. Deadline for placing orders at the sale price is Friday, July 23rd. If you have questions, please email Una Erlandson.
Mural Painting ProjectWe have held a couple of mural painting sessions at the new building. It has been a lot of fun and we hope that more of you can join us for the next session to be held on Sunday, July 4th from 11:00-2:00pm to continue work on the murals. NO EXPERIENCE OR PAINTING EXPERTISE IS REQUIRED. Children are welcome. As we shared in a member update email, Lynn Miller, a local mural artist and Co-op manager, is holding sessions open to all Co-op members to paint 2-3 large murals that will be displayed on the walls of the new co-op building. Relocation & Work Days UpdateSee photos above showing progress made on the new spaceWe are making progress on preparing the new location and plan to move between July 10-20th. We will update you regarding days we will be closed for the move and our reopening date. If you cannot physically assist with the move, please consider making a donation to help defray the moving costs.

Our next work day is this Saturday, 7/3, and we will continue holding work days, mostly on Saturdays between 10:00am-2:00pm, between now and our move dates and are in need of volunteer assistance. If you would like to help, please contact Theresa Pizzuto, Interim General Manager at theresa.pizzuto@gmail.com.

We will share updates as soon as we have more information. In the meantime the Co-op is operating as usual.
 2021 Membership Renewals

Monthly Senior Discount Day The Co-Op offers a 5% discount to seniors 65+ on the 3rd Saturday of each month.  The next senior discount day will be held on the next 3rd Saturday after we reopen at our new location.

Vibrant Tasty Green BeansThe following recipe is best made just before serving time. But as I mentioned in the main post you can make/prep this ahead of time by cooking the leeks and dill first and setting them aside. Instead of cooking the green beans in the skillet, blanch them in a pot of boiling, well-salted water for about a minute. Drain the beans and dunk them in a large bowl of ice water to stop the cooking. Drain and place the beans in a bag or bowl in the refrigerator until ready to use. When ready, combine the components – you can do it at room temperature, or heated quickly in a skillet or pan.

INGREDIENTS4 leeks (or one bunch of scallions), well washed, root end and tops trimmed, sliced lengthwise into quarters and then chopped into 1-inch segments1/3 cup fresh dill, well chopped3/4 pound green beans, tops and tails trimmedextra-virgin olive oilfine-grain sea saltINSTRUCTIONSIn a large thick-bottomed skillet of medium-high heat add a generous splash of olive oil, a generous pinch of salt and the leeks. Stir until the leeks are coated and glossy. Cook, stirring regularly until a lot of the leeks are golden and crispy. I stir every minute or two in the beginning, and more often as they brown using a metal spatula. All in all it takes me roughly 7 – 10 minutes to brown the leeks. At this point stir in the dill, and then stir in the green beans. Cook for a couple more minutes – just until the the beans brighten up and lose that raw bite. Turn out into a bowl or onto a platter and serve immediately. If you want to prepare these green beans ahead of time – read the head notes.
